The wood texture varies from flavour to flavour, both the oak and beech is fine dust, whilst the maple, apple, cherry, hickory and alder is a mixture of dust and small flakes. Use piled up in the base of your smoker to minimise the surface area and promote dense wood smoke and minimal heat rather than flame. Combine the beech dust, which has a milder flavour than oak, with a fruitwood flavour where denser dust is required.
