This is the wood dust equivalent of a full larder incorporating six of the most popular wood dust flavours suited to a wide range of different foods and cold smoking projects. The assortment contains 1kg packs of both oak and beech dust and 500g packs of hickory, apple, cherry and maple dust. The oak and the beech are a very fine consistency dust, ideal for use with the ProQ Cold Smoke Generator or other cold smokers or hot smokers such as the Camerons, whilst the hickory, apple, cherry and maple are a bittier dust which can be used as a complementary flavour.with the finer dust in the ProQ Cold Smoke Generator, or on their own with the Camerons range. Try these dusts, soaked first, on any hot charcoal smoker too.
Oak and hickory are strong flavours suitable for red meat and oily fish
Apple, Cherry and Maple are medium strength for white meats, poultry and cheeses. Maple is ideal for bacon smoking.
Beech is the mildest of all smoking woods but creates a wonderful subtle smokey flavour and works well with more delicate fish or white meats.
