A range of interesting new wood dust flavours for cold smoking or for use in stainless steel or tin fish smokers, this new range of Hot Smoked wood dust is available in 500g priced at £4.00 or 1kg packs priced at £7.50. The wood texture varies from flavour to flavour, both the oak and beech is fine dust, whilst the maple, apple, cherry, hickory and alder is a mixture of dust and small flakes. Use piled up in the base of your smoker to minimise the surface area and promote dense wood smoke and minimal heat rather than flame. Combine the beech dust, which has a milder flavour than oak, with a fruitwood flavour where denser dust is required.
* New Flavour * Now available, Douglas Fir wood dust. This is a highly aromatic and slightly resinous wood dust which is ideal for mixing with a traditional hardwood such as oak to add extra colour to your cold smoked dishes.
If selecting wood dust for use in the ProQ Cold Smoke Generator, we recommend the finer oak or beech dust. The bittier dusts can be used to create additional flavours by scattering on top of a bed of the oak or beech.
