What is Jerk?
The origins of Jerk are believed to date back to a traditional native Arawak Indian method of seasoning and smoking meat using Jamaican pimento (allspice). The word itself comes from the Spanish word 'Charqui' meaning dried meat. Over time this has evolved to 'Jerky' and 'Jerk'. Another theory is that the name comes from the practice jerking or poking holes into meat to fill with spices before cooking. Common components are scotch bonnet chillies plus thyme and other herbs and spices. Marinaded meats are basted with the seasonings whilst cooking slowly over a wood fire.
