We've combined the very popular ProQ Amigo with the ProQ Cold Smoke Generator and two types of wood smoking product to create a complete hot and cold smoking set. Hot smoke by using a charcoal heat source in the charcoal pan and adding aromatic wood smoke, or cold smoke by placing the ProQ Cold Smoke Generator in the charcoal pan, filling with wood dust, lighting it from one corner and allowing it to smoulder slowly for up to 10 hours. This produces wonderful wood smoke without the heat, perfect for cold smoking conditions. This smoker set will allow you to create amazing hot smoked dishes such as marinaded pork loin, whole smoked chicken, hot smoked mackerel as well as cold smoked recipes such as smoked cheeses, smoked salmon and pancetta rolls.
