The best selling Bradley Original Smoker is designed to take the guess work out of food smoking using a simple but highly controllable smoke generator unit supplied with the product. As with the rest of the Bradley range of food smokers, it is incredibly easy to use - just plug into the mains and you are ready to smoke. The unit offers the flexibility of genuinely low cold smoking temperatures* as well as hot smoking, barbecuing and slow roasting. It's key advantage over other smokers on the market is it's ability to create clean and consistent smoked results with fully controllable temperature and timers.
Flavoured wood bisquettes are fed into the offset smoke generator - which is attached to the side of the unit thus maximising the cooking space inside. The bisquettes, pre-formed from 100% natural compressed wood are burned in the generator for 20 minutes each creating even and continuous smoke generation and preventing temperature fluctuation. This process is fully automated, so once the bisquette feeder is loaded and the unit started up, the first bisquette is moved onto a metal hot plate at the base of the unit where it smoulders for its allotted 20 minutes before being pushed into the bowl of water where it is fully extinguished, by the following bisquette. The unit will operate unattended for up to 8 hours, making the Bradley range one of the least labour intensive smoking techniques.
The internal 500 watt heater will reach a maximum temperature of 160 degrees C and as this is controlled independently from the smoke generator with its bisquette feed, it can also be used to hot smoke, or by removing the wood smoke can simply be used as a slow cooker of slow roasting oven. The low temperature cooking environment is perfect for any type of food smoking which relies, for its depth of taste, on slow cooking. The infra red heater source is also particularly suited for drying fruits. Customers have also successfully smoked garlic, chilli peppers and pineapples, amongst other things. The limits are really only in your imagination.
The size of a small fridget, the Bradley Original weighs in at around 18kg including the smoke generator so is easy to carry. Best used in a garage or well-ventilated outbuilding, the Bradley can also be adapted for use in utility areas by piping the smoke released from it's top vent outside. This can be achieved either by use of plastic piping or a domestic extractor hood.
* Bradley are launching a dedicated cold smoking adaptor for the Bradley range this Spring. We will bring you news on this as soon as we have it. For the moment, cold smoking is achieved by offsetting the smoke generator - to eradicate heat from the bisquette hot plate - and piping the smoke via a 1m to 2m length of piping such as tumble drier hose into the unit.
