The ProQ Cold Smoke Generator is a fantastic new product which will turn your hot smoker into a cold smoker. Until now, hot smokers such as the ProQ, Grillpro and Brinkman ranges have been limited to hot smoking only, but now, with this deceptively simple product, you can create just the wood smoke without the heat to achieve cold smoking conditions. So, instead of lighting up your charcoal base to generate hot wood smoke flavours, you simply place the smoke generator into the base of your smoker, fill the spiral metal frame with your choice of wood dust and light the tealight candle to make the dust smoulder. Once the smouldering process has begun the candle can be extinguished and the dust will gradually smoulder around the spiral, producing cold smoke flavour for up to 10 hours. The frame holds approximately 100 gms of wood dust.
The smoke, less the heat, can be used to cure foods which, having previously been brined or marinaded in a cold smoking cure, will absorb the wood smoke to create a barrier to pests and disease. This has a preservative effect and although the food effectively remains raw it is safe to eat - such as smoked hams, saucisson or salmon, or can be cooked for consumption at a later time. This device will add a vast new culinary repertoire to your original hot smoking capabilities, though care should be taken to ensure temperatures remain below 20 degrees C where possible to prevent the food beginning to cook which will result in the loss of the preservative qualities.
Try with any fish, bacon or uncooked ham joints. Particularly effective with otherwise rather bland cheeses such as many cheddars or soft cheese such as brie. The possibilities are endless! PLEASE NOTE: Our oak and beech wood dust is the most effective for use in the ProQ Cold Smoke Generator as they are both a very fine particle. All other flavours have 'bits' as well as dust and these are not as effective at holding the smouldering effect, but they can be used scattered on top of either an oak or beech base to add additional flavours. Given that it is the mildest of the flavours that we offer, we recommend using beech as the base layer with one of the bittier dust flavours such as maple, alder, apple, cherry, hickory and mesquite.
