Artisan smoked chutneys and whole smoked produce

       

Lin and Paul Whitehead have been producing a range of unusual artisan chutneys, marmalades and jams since 2004. A couple of years ago they hit on the idea of smoking some of their ingredients to produce unique taste combinations involving smoked aubergines, tomatos, garlic, ginger and chillis. They first bought a hot water smoker which worked perfectly for fruits and vegetables and later they invested in a Bradley smoker and subsequently a cold smoking adaptor to whole smoke garlic, chillis and ginger. ARK CHICKENS

Jason Wise has been producing free range ark reared chicken for several years and last year began a new farm shop venture, The Chicken Shack, selling his home reared poultry and adding Dunsmore Gloucester Old Spot pork. With chef, Phil, on board, Jason has also created a range of freshly prepared meals using his produce and to expand his repertoire further invested in a Bradley Digital 6 Rack Smoker to hot smoke chicken and smoke cured meats. With a bit of clever adaptation to pipe the excess smoke to the outside, Jason’s Bradley has been positioned within the farm shop so that shoppers will be enticed by the smoke flavours it produces.

THE FAT PIG

Having been transformed from one of Exeter’s more notorious back street drinking holes, The Fat Pig is now a vibrant gastropub with a sophisticated menu based on locally sourced ingredients. Owner and chef Hamish Lothian has brought in a Bradley smoker to add to his interesting range of menu options including starters such as A Selection of Cured Meats with Shaved Pecorino Cheese and Quick Baked Escargots and for main courses, Whole Roast Pidgeon, Braised Lamb Heart and Steamed Mussels. According to one review, it’s just what Exeter needed!
