A chrome steel rack designed to hold chicken, pheasant or duck upright during the smoking process. The rack allows the meat to cook from the inside as well as the outside, speeding up the cooking time and promoting an even browning of the skin. Also, because excess fat drips away rather than collecting inside a bird placed on its base, it's a lower fat way to cook poultry. Use of two or more racks will also increase the cooking surface area.
